    Have you tried tofu? I tried tofu as a substitute for eggs and in soup as well. It’s actually very good! They say to be careful of the brand you select though. Seems some brands of tofu are not that good.

    dipping the tortilla in water that has a few teaspoons of olive oil in it, will help it bake in the oven so that it gets crispy instead of floppy. All you need to do is dip it in and out really quickly. Then salt it lightly and throw it in the oven. You can puncture any bubbles in the tortilla so that it is level-(ready for toppings).     thank you for the advice. i have been learning that tortillas are very versital and i used them a lot in place of bread. my only thing about eggs is the cholesterol and i dont like egg substitute very much cuz it has no flavor. but i would eat an egg occasionally. so next time i do i’ll try it that way. thanks. i do eat cottage cheese some too, and i like to cook with ground turkey. course if the rest of my house liked it too i’d be on a roll.

    (continued) Tostada- Dip a tortilla in a pie pan full of water containing 2 cups of water and 2 Tbspoons olive oil. Salt tortilla and Bake on cookie sheet at 350 till crispy. Top with small amount of beans, cottage cheese, ground turkey, tomatoes, taco sauce, etc.

    Also try: Stuffed cabbage, stuffed zucchini, fajitas, popcorn with sprinkled Parmesan cheese, string cheese, and turkey jerky.

    Hi there,
    I have some ideas. I’ve been a diabetic most of my life and I am slender because of wise food choices.
    Here are some ideas:
    Breakfast: Scrable 2 eggs with 1 Tbsp cold milk and 1 tsp cold water. Add 1 corn tortilla, chopped, diced lean ham or turkey and onion.

    Other ideas: Put ground turkey, seasoned with taco seasonings, into a tortilla. Add cottage cheese instead of cheese. Also add lettuce, tomatoes, onions or any other veggies you like.

    Natural peanut butter, the kind you have to stir with a spoon and put in the refrigerator, is a good protein source and also healthy fat. Almonds/nuts are also healthy fats and good protein sources. You can have the peanut butter on toast in the morning. Low-fat/fat free cheese is also a protein source to consider for the morning.

    If porridge is oatmeal then we can’t have it, the carbs are too high. Yes, boost is a lot like ensure, except that the kind I buy is controlled for carbs/sugars. It also has added ingredients that help lower and control blood sugar. There is another kind that I sometimes buy that contains slow release carbs, it’s a lot like ensure also. I’ve been living on those for breakfasts a lot lately. they don’t taste good but they are good nutrition and controlled calories/fat/sugar. so that’s the plus.

    i do have weight watchers yogurt but it doesn’t taste very good to me. one yogurt is 1 carb choice. grape nuts have a high glycemic index rating (71) which is not good for a diabetic. It has almost 2 carbs per serving also. So that alone is 3 carb choices. No beverage or anything else with it. It is a good suggestion for a day when we are not very hungry. I’ll have to think about it. They say cereal in general is a no-no for diabetics. Well that’s what the dietician said to us. Thanks
