A Diabetes recipe for a snack or light meal, something a bit tasty.?


I get a pkg of stir fry veggies from the frozen food section, and some of the grilled chicken strips from the meat section (the ones that you can use in quesadillas) - and do a quick stir fry of veggies and chicken with soy sauce. It is yummy, filling and totally appropriate for diabetics.

Angel food cake with strawberries (sweetened with Splenda) and cool whip for dessert is wonderful.

    Chicken and Broccoli in Mushroom Sauce

    Servings: 6
    Ingredients

    Vegetable oil spray
    10 ounces fresh broccoli spears (or 10-ounce package frozen)
    2 cups diced, cooked chicken
    For Sauce:

    1 teaspoon light margarine
    8 ounces fresh mushrooms, sliced (2-1/2 to 3 cups)
    1-1/3 cups Chicken Broth
    5-ounce can fat-free evaporated milk (2/3 cup)
    1/4 cup all-purpose flour
    1/4 cup sliced green onions
    3 tablespoons grated Parmesan cheese
    Dash of nutmeg
    For Topping:

    1/4 cup fresh bread crumbs (or 1/2 slice bread)
    2 tablespoons finely snipped fresh parsley
    1 teaspoon grated lemon zest

    Directions

    Lightly spray a 9-inch square baking pan with vegetable oil spray.
    Steam broccoli spears until tender-crisp, then plunge into ice water to stop cooking. Drain and blot dry on paper towels. Arrange in baking pan.
    Evenly place chicken over broccoli. Set aside.
    For sauce, heat margarine in a medium nonstick skillet over medium heat. Swirl to coat bottom. Cook mushrooms, covered, for 7 to 9 minutes, or until they've been released of their juices. Increase heat to high and cook, uncovered, for 1 to 2 minutes to allow liquid to evaporate. Set aside.
    Preheat oven to 375 degrees F.
    Pour broth and milk into a medium saucepan. Whisk in flour. Bring to a boil over medium-high heat; cook until thickened, 3 to 4 minutes, stirring occasionally.
    Stir in green onions, Parmesan, nutmeg, and mushrooms. Pour over chicken in baking pan.
    In a small bowl, combine topping ingredients. Sprinkle over casserole. Bake for 25 minutes.

    Butterbean bruschetta

    Serves 2

    Cooking time 10 to 30 mins

    Ingredients

    2 slices bread
    ½ red pepper
    handful basil leaves
    2 tbsp olive oil
    For the butterbean purée:
    400g/14oz tin butter beans
    2 tbsp olive oil
    2 garlic cloves, crushed
    handful fresh chives
    50g/2oz grated cheese

    Method

    1. Preheat the oven to 220C/425F/Gas 7. For the purée, drain the butterbeans and blitz in a food processor until just mashed.
    2. Add the olive oil, garlic, chives and cheese and blitz to form a purée.
    3. Chargrill the bread in a dry frying pan on a medium to high heat for 2 to 3 minutes until golden on both sides.
    4. Cut the red pepper into strips and place on a baking sheet. Coat in olive oil and put in a hot oven for 10 to 12 minutes.
    5. Serve half the butterbean purée on toast.
    6. Add the red pepper slices and garnish with basil leaves.

    1 1/2 pounds large white mushrooms
    1/2 cup olive oil
    5 ounces chopped onions
    juice of 1 lemon
    1/2 cup white wine
    1 sprig thyme
    6 parsley stems
    1 teaspoon coriander seeds
    1 teaspoon peppercorns
    2 bay leaves

    Clean mushrooms, rinse in water, drain and slice.
    In a medium pot, combine oil and chopped onions. Simmer for 5 min. Add mushrooms. Add lemon juice and white wine.
    Combine herbs and spices in a cheese cloth.
    Add to mushrooms. Cover and simmer for 5-6 minutes. Uncover. Transfer to a bowl. Chill.

    Serve with wholemeal toast.
